A Jalisco-produced Agave Spirit distilled from Blue Weber Agave (Agave tequilana) using traditional tequila-style production methods, without permission to use the CRT protected appellation ‘Tequila’. What is Bulk Agave Spirit?
Bulk Agave Spirit is a distilled spirit made from the agave plant, supplied in large-volume formats for commercial use.
Crafted from the cooked, fermented, and distilled heart of the agave (the piña) it offers the distinctive character reflecting the terroir of the land, variety of agave used and the cultural practices of the communities that craft them.

How Agave Spirits are Made
While each Agave Spirit has it’s own regional traditions and production rules, the core steps are broadly similar.
Agave Spirits begin in the fields, where mature agave plants are harvested. Their leaves are removed to reveal the sugar‑rich piña. These piñas are then cooked either traditionally in slow‑bake ovens or using modern autoclaves and diffusers to convert their natural carbohydrates into fermentable sugars.
Once softened, the agave is crushed to release its sweet juice. Producers may use traditional stone mills or modern mechanical shredders, depending on the scale and style of production.
The extracted juice is then fermented with yeast, transforming the sugars into alcohol. After fermentation, the liquid is distilled typically using pot stills, column stills, or a combination of both. Pot stills retain more of the agave’s natural character, while column stills offer consistency and efficiency.
Some agave spirits are bottled unaged, while others are matured in oak to develop deeper flavour and complexity. Production methods vary by region, tradition, and spirit type, which is what gives agave spirits their remarkable diversity.


What are the Different Types of Agave Spirit?
Agave Spirits encompass a diverse family of regional styles, each shaped local agave varieties, traditional techniques and distinct terroirs. While Tequila and Mezcal are the most well-known, the category contains many unique varieties.

Mezcal
Primarily produced in Oaxaca (although it is legally produced in nine Mexican states under the Denomination of Origin) using a wide range of agave species. The agave hearts are typically roasted in earthen pits, which give Mezcal its distinctive smoky characteristics.
Tobalá:
Tobalá is an artisanal Mezcal made from Agave potatorum, which is typically found growing wild at higher altitudes, often in rocky, nutrient-poor soils. Tobalá takes longer to mature and yields significantly less liquid per plant, contributing to its rarity and premium positioning in the market.
Smoked Espadín:
Made from Espadín agave, this mezcal is pit-roasted to create a distinctive smoky profile, layered with earthy richness, subtle sweetness, and bright citrus tones.
Agave Spirits
Raicilla:
A heritage spirit from Jalisco’s coastal muncipility (Cabo Corrientes) and further inland in the mountain regions of Mascota and Sebastián del Oeste. Typically wild-fermented (in tabernas) with expressive, fruity and rustic flavours. The Raicilla from the coastal regions typically tastes quite different from the Raicilla of the mountains.
Bacanora:
A regional agave spirit from the state of Sonora, in Northern Mexico. Lightly smoky, herbal and smooth with deep cultural roots. In 2000, Baconara was granted its own Denomination of Origin (DO), giving the spirit protected geographical status.
Sotol:
Although not technically an agave sprit as made from Dasylirion genus (part of the asparagus family), Sotol is often grouped with agave spirits due to similar production methods and Mexican origin.
This spirit is traditionally produced in northern Mexico. Dasylirion (known as sotol in Spanish and desert spoon in English) is native to the Chihuahuan Desert. Sotol received its Denomination of Origin (DO) in 2002, restricting legal production in the Mexican states of: Chihuahua, Durango and Coahuila.
Similarly to agave spirits, Sotol is highly terroir-driven with mountain-grown Sotol having herbal and forest floor notes, whereas desert-grown Sotol leans more mineral, earthy and dry.
